Chicken Salsa Bake
Boys, I may not know much, but I know chicken poop from chicken salad.

Chicken dishes have been around a long time. The problem was, not everyone was entitled to eat them. This dish in particular probably originated during the 1500-1600s, but only the prosperous could afford to enjoy poultry.

This dish comes from Susan via Liz Smith. It’s similar to Mediterranean chicken, an Italian dish made with salsa, that may have its roots in Chicken Caccitaore. This is so simple, it can be thrown together in minutes, and perfect for the busy family.

INGREDIENTS

4 chicken breasts
1 can black beans
1 cup salsa
1 cup shredded cheese
Salt and pepper to taste


DIRECTIONS

Preheat oven to 400 degrees.

Spray casserole dish with non-stick spray. Drain black beans and cover the bottom of the casserole dish. Place chicken breasts on top. Add salt and pepper and then cover with salsa. Cover with foil and bake 45 minutes or until chicken is done.

Remove foil and cover with shredded cheese. Cover again and return to oven until cheese is melted.
