My late parents used to have a little place on the costa brava (I sold it, it was their dream) and I remember Moroccan mint growing in our flower pots / garden. It made the best (iced) tea.

Yes, mint in lemonade is something my grandmother and mother added to theirs. We always had fresh mint growing in the garden in the summer. It does make it so much more refreshing!
I absolutely LOVE Rhubarb! I am also a fan of rhubarb/strawberry mix. My mom would make rhubarb pies and also biscuits with a rhubarb sauce. Kind of like strawberry shortcake, but with rhubarb. I look forward to trying this cake. Thank you for sharing!

That's definitely a variation to consider. But I did the "duchesse" potatoes the "classic" way, for starters. I always start out with the "classic" version of a recipe before "venturing out" into variations... if that makes sense.
Anyway, since coffee would cause heartburn to 99,999999% with these, I'd say we have an "außerplanmäßig" chilled beer with them.
