That's definitely a variation to consider. But I did the "duchesse" potatoes the "classic" way, for starters. I always start out with the "classic" version of a recipe before "venturing out" into variations... if that makes sense.
Anyway, since coffee would cause heartburn to 99,999999% with these, I'd say we have an "außerplanmäßig" chilled beer with them.
If I may offer a suggestion... You could top the cupcakes with the potato icing after they come out of the oven and add some "sprinkles" of green peas, lol.
