The best cookie I ever had was one my mother-in-law used to make; she just called it a filled cookie. She baked them only at Christmas, so they were special -- made from 2 sugar cookie dough cut-outs, filled with a sort of mince-meat mixture (chopped fruits, nuts, and spices), and crimped all around. I tried making them one time, but they just weren't as wonderful. Wish I had a couple of her version right now!
