What a great question. I do in winter, spring and autumn, but in summer, you always end up with a puddle of yellow liquid, so I keep it in the fridge during the day and on the counter at night (so long as the nights do not stay above 30 degrees C). Problem is, I prefer butter on toast (and on crumpets!) and for cooking (although margarine does work better when roasting) so I always like to have it available.
And the biggest problem nowadays is I became lactose intolerant when my gall bladder was removed, so having too much butter does nasty things to my bowel movements... but I love the taste of butter...
