With the caveat that I agree there shouldn't be a such thing as a "guilty pleasure" because you shouldn't feel bad about any kind of reading that you enjoy, I suppose my guilty pleasures would be action/thrillers (especially in the espionage and vigilante subgenres) and science fiction in the space opera subgenre. Those are the kinds of stories I can read again and again, even when they're not particularly good facsimiles of more successful books.
I can't even count the number of Star Wars and Jason Bourne rip-offs I've read... and yet every time I read a book synopsis along those lines it's like, "Ooh, maybe I should read this one too?"
