The best way I have found to write a journal for a book so it stands out from the rest of the text in the way it is written is to make a list of all the things they do. They might not use commas, they might always use the wrong "there", they might cross words out (as mentioned previously) because they sound "too mean". The prose should not be as polished as the rest of the story; journals are always first drafts, remember.
And, if in doubt, ask someone else to write it their way and use that difference as a basis for your own interpretation.
